Ingredients
1cupself rising floursifted well
1/2cupwhole buttermilk
1/4cupcanola oil or melted butter (cooled)
Instructions
Set oven to 425 degrees.
In a medium sized bowl, sift 1 cup self rising flour.
Add 1/2 cup of whole buttermilk. (Low fat does not work as well.)
Add 1/4 cup of canola oil or 1/4 cup melted, cooled butter.
Stir together for only a few seconds until it forms a sticky wet dough. Do not over mix!
Spray the baking pan with a little cooking spray.
Divide the dough into 4 equal sized portions.
Using large spoon, drop the dough onto the baking sheet just touching each other. Smooth out with a little flour or a bit of oil on your fingertips.Or, flour your hands and shape each section of dough into a ball in your hands then place on the baking sheet and pat down just enough to lose the ball shape.
Bake at 425 for 15 minutes checking toward the end of baking. Broil for a few seconds to brown the tops if needed.
