Bud's Three Bean Chili
A competition worthy chili recipe that is easy and delicious! Perfect for making ahead and freezing for quick weeknight meals.

- 1.5 lbs ground beef
- 1 onion, chopped
- 1 celery stalk, chopped
- 1 can pinto or kidney beans (light or dark red)
- 1 can black beans, drained and rinsed
- 1 can chili beans
- 1 can Rotel diced tomatoes
- 1 cup V8 juice
- 1 cup Bloody Mary mix
- 1 package Carroll Shelby chili mix (or ½ package of Wick Fowler 2 alarm chili mix - probably won't need masa to thicken chili)
In a 5 quart stew pot, brown ground beef with onion and celery. Drain.
Add all of the remaining ingredients and simmer for 1 hour or more.
