Bud's Three Bean Chili

A competition worthy chili recipe that is easy and delicious! Perfect for making ahead and freezing for quick weeknight meals.

Ingredients

  • 1.5 lbs ground beef
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1 can pinto or kidney beans (light or dark red)
  • 1 can black beans, drained and rinsed
  • 1 can chili beans
  • 1 can Rotel diced tomatoes
  • 1 cup V8 juice
  • 1 cup Bloody Mary mix
  • 1 package Carroll Shelby chili mix (or ½ package of Wick Fowler 2 alarm chili mix - probably won't need masa to thicken chili)

Instructions

  • In a 5 quart stew pot, brown ground beef with onion and celery. Drain.
  • Add all of the remaining ingredients and simmer for 1 hour or more.
