A Cabbage Chicken Salad Recipe You Need to Try
This is my favorite salad to have as a full meal on its own. It is tangy, crunchy, and filling. It is a good salad to take to friends who are recuperating or someone with a new baby because they can serve it straight from the fridge with no prep at all. This would also be a great recipe to serve on a trio salad plate. This recipe was given to me many years ago by my cousin, Marlene, and I have made it numerous times since then. It is one you should try, but I will warn you that it is addictive! It is hard to stop eating it because it is so good!
Cabbage Chicken Salad Ingredients
- 6 chicken breasts, boiled and cut into pieces
- 4 green onions, slices
- 1 medium sized head of cabbage, chopped coursely
- 2 pkg. Ramen noodles (chicken flavor) Do not cook!
- 1/2 cup sliced almonds (optional, but highly recommended!) (More are needed if adding for garnish before serving.)
- 1/2 cup of vegetable oil
- 2 Ramen Seasoning packets from the noodles
- 4 tablespoons sugar
- 6 tablespoons apple cider vinegar
- 1 teaspoon pepper
- 2 teaspoons salt
- 2 teaspoons Accent (optional)
Cabbage Chicken Salad Directions
Chop the cabbage and chicken. Slice the green onions. It’s pretty with some of the dark green included. Toss it all into a big bowl. Add the uncooked Ramen noodles, breaking them into small pieces. Add the sliced almonds if using those. Set this aside. In a small pot, combine and heat the dressing ingredients together. Stir often. Pour this over your cabbage mixture and stir to coat well. Now your salad needs to marinate in the fridge. Several hours or overnight is needed to soften the Ramen noodles. The hardest part is waiting for it to be ready to eat! Be sure to stir before serving. (FYI: This recipe makes a lot but number of servings is generally dependent on the size of the head of cabbage you choose.)

Equipment
- 1 large pot for cooking chicken breasts
- 1 extra large mixing bowl
- 1 small pot
- 1 mixing spoon
- 1 knife and cutting board
Ingredients
- 6 chicken breasts cooked and chopped
- 4 green onions sliced
- 1 medium head cabbage coursely chopped
- 2 pkg Ramen Noodles (Chicken Flavor) Do Not Cook!
- 1/2 cup almonds (optional) (More needed if adding for garnish before serving.) sliced
Dressing
- 1/2 cup vegetable oil
- 2 packets seasoning from Ramen noodles
- 4 tbsp sugar
- 6 tbsp apple cider vinegar
- 1 tsp pepper
- 2 tsp salt
- 2 tsp Accent (optional)
Instructions
- Cook and chop chicken breasts into small pieces.
- Slice green onions and chop cabbage coursley.
- Combine these ingredients into an extra large bowl along with the 2 packages of Ramen noodles broken into small pieces.
- Add almonds if using. Stir together and set aside.
- Combine all of the dressing ingredients together into a sauce pan and heat together stirring often.
- Pour dressing over the cabbage mixture, stir to coat well, and marinate in the refrigerator overnight.
- Stir before serving. Add some extra sliced almonds for garnish. Enjoy!
