The Only Pecan Pie Recipe You’ll Ever Need!
My husband’s favorite pie is a good ole southern pecan pie! Over the years I have made many, many of these easy and delicious southern pecan pies for him. One of my pecan pie recipes came to me at my bridal recipe shower in 1978 from my husband’s sweet grandmother, whom we lovingly called Mama Webb. My other recipe, I learned as a child from my own dear mother “helping” her in the kitchen as I was growing up! My recipe is the merging of their recipes, but really they are so similar that it meant very little change to either one. When I make my pecan pies I always think of these two very special women who were two of the best cooks I have ever known.
Instructions:
First, preheat your oven to 350 degrees. Next, gather all ingredients. Now, melt the butter or margarine and let it cool. You don’t want to cook the eggs when you add it! Now, whisk the eggs in a medium sized bowl. Into the bowl, add in the corn syrup, sugar, flour, butter or margarine, vanilla, and salt. Whisk all together.
Now, add your pecans (halves or chopped pieces) to the filling, stir it together and pour it into the pie crust; or you can put your pecans in the pie shell and pour the filling over them. (Do not use a regular sized frozen pie crust. It will run over!) You can move the pecans around to your liking. If you are using halves you can keep them out and put them on top for a more precise placement.
Put it on a baking sheet and slide it into the oven. Let it bake for 60 to 70 minutes. Check it after about 45 minutes and if it is getting brown on top put a piece of foil over it to keep it from getting too done on top. When it looks like it’s done (see note below) take it out and let it cool completely. Enjoy!
Helpful tips:
- Using the half tablespoon of flour will keep your pie filling from being runny when you cut into it. It is a very important addition.
- Chopping your pecans will make your pie easier to slice but it’s not necessary.
- About 45 minutes into baking you be sure to check your pie. You do not want the top to get too brown before the pie is done. Just lay a piece of foil over it after about 45 minutes to keep that from happening.
- How will you know the pie is done? If you pie moves a lot, kind of like a wave across the top when you check it, then it isn’t done. Leave it in a little longer. It will move a little in the middle when it’s done but it shouldn’t move all the way across the pie.
- I have found Sam’s Club to have the best price on store bought pecans. If you have a membership check this link out.
