The Best Peanut Butter Cookie Recipe – Made with Love!
When I think of peanut butter cookies I think of my mama and my childhood. I remember my brothers, sister, and I getting off the school bus and trudging to the house. As soon as we would get to the porch and start pulling the screen door open we would know; Mama had made peanut butter cookies! We would burst in and there on the kitchen table would be a plate laden with the best peanut butter cookies in the world. They were the best because they were cookies and we were kids, but even more because the main ingredient was her love for us, her children. Cooking for her family was one of the ways she loved us well. It was always such a sweet surprise when she made us something special and those are precious memories to this day.
Peanut Butter Cookies and Dark Shadows!
Now, I must confess something. When I think of peanut butter cookies there is another memory that comes to mind. My siblings and I would all get a couple of peanut butter cookies and our favorite drink and find a place to sit, usually on the floor, near the old console tv set. Then, we would wait for Dark Shadows to come on. Who remembers that show? Barnabas, Quentin, Angelique, Collinwood Mansion, oh my! We could not wait to watch it! It was a unique soap opera drama type show back in the late 60’s, early 70’s that had vampires, werewolves, and other creepy characters. We loved watching it! Rachel's Peanut Butter Cookies
So, now back to the cookies. These cookies are really so delicious. They are the ultimate peanut butter cookie. They are soft, chewy, and will satisfy your sweet tooth and your peanut butter cravings! Now let’s talk ingredients.
Ingredients:
- 1/2 stick butter, softened
- 1 cup sugar
- 1 cup peanut butter
- 1 cup flour, sifted
- 1 large egg, whisked
- 1 teaspoon vanilla flavoring
- 1/2 cup peanut butter chips (optional, but really, why leave them out! 🙂
Lay the butter out to soften for a couple of hours. Gather your other ingredients. Set your oven to 350 degrees. In a medium to large bowl add the sugar and softened butter. You can cream this together with a mixer with paddles, or use a pastry/dough blender like this one from Amazon, but I just use a big fork and mash it together like my mama did. When the sugar and butter are mixed together well, add the sifted flour, peanut butter, egg, and flavoring and start mixing together. When it is partially mixed add your peanut butter chips if you are using them. (My mom never used peanut butter chips so the cookies are great even without them but I like to include them!) Mix it together until all the ingredients are combined into a very stiff dough.
Now spritz your baking sheet with a little cooking spray. Start forming balls from the cookie dough. The balls should be a little bit smaller than a golf ball. Or if you like to keep the size uniform use a cookie scoop like these from Amazon. Put the balls on your cookie sheet placing them about an inch or more apart. Once you have all the balls ready take a fork and press to add the traditional fork imprint. You can criss cross it if you want.
Put the cookies in to bake for about 9 to 10 minutes. You want them to still be soft and lightly browned so keep an eye on them. You really do not want them overdone! Let them cool for about 15 minutes to let them set. Enjoy!

- 1 cup creamy peanut butter
- 1 cup sugar
- 1 tsp vanilla
- 1 egg lightly whisked
- 1/2 cup peanut butter chips
Instructions
- Lay the butter out to soften for a couple of hours. Gather your other ingredients. Set oven to 350 degrees.
- In a medium to large bowl add the sugar and softened butter. You can cream this together with a mixer with paddles but I just use a big fork and mash it together. Mix the sugar and butter together well.
- Sift in the flour.
- Add peanut butter, egg, and flavoring and start mixing until partially combined.
- Add the peanut butter chips if you are using them. Mix until all ingredients are combined.
- Spritz your baking sheet with a little cooking spray.
- Start forming balls from the cookie dough. The balls should be a little bit smaller than a golf ball. Lay them on your cookie sheet placing them about an inch or more apart.

These peanut butter cookies are a trip back to our childhhod home and the love our mother poured into all the delicious food she prepared for us. Everytime I smell, taste or make these it takes me back to the best of childhood memories!!!
