The Best Cowboy Caviar Ever! I Promise!
This recipe is one you want! It is a great…salsa? Salad? Dip? I’m not sure, but I do know it is the best cowboy caviar! My brother gave me this recipe about 5 years ago. He got it from a men’s group he belonged to. It was so popular in that group and he liked it so much, he had to share it. I have had other cowboy caviar, most made with Italian dressing, but this one has no Italian dressing and it is the best! I think the Tiger Sauce is the secret! It is sweet, tangy, and adds a little kick. Seriously, this stuff is better than good, it’s addictive!

Ingredients for Cowboy Caviar
Here are the ingredients but you can make some substitutions of ingredients for your preference. I make it exactly by this recipe.
- 2 cans black eye peas
- 1 11 oz can of shoepeg corn (I had to buy two small cans since that was all they had at the store.)
- 1 green bell pepper
- 1 sweet onion
- 1 small jar of pimentoes (I used half of the larger jar pictured above.)
- 1/2 cup apple cider vinegar
- 1/2 cup canola oil
- 1/2 cup sugar
- 3 tablespoons Tiger Sauce Original

Tips and Substitutions
Tips:
- Chop the pepper and onions into little cubes that are about the size of the peas. I chop them by hand because if they are too small it won’t have as much crunch.
- Drain peas, corn, and pimento well. You don’t want the extra juice to dilute your sauce.
- Let it marinate for about 24 hours. It will not have as much flavor before it has marinated.
Substitutions:
- You can put in some yellow, orange, or red peppers. I prefer the green pepper in this recipe.
- I have known people who use black beans but I never have because I don’t like them. I can’t say how it would affect the flavor to use them.
These are my all time favorite mixing bowls! Deep and easy to hold, and has grips on the bottom!

Delicious Cowboy Caviar
Equipment
- 2 bowls
- 1 colander (strainer)
- 1 large spoon
- measuring cup and spoons
Ingredients
- 2-15.8 oz cans black eye peas drain very well
- 1-11 oz can shoepeg corn drain well
- 1 green bell pepper chopped into small cube pieces about the size of the peas
- 1 sweet onion chopped into small cube pieces about the size of the peas
- 1 small jar pimento drained and chop a little if needed
Sauce ingredients: Prepare in separate bowl and stir together well.
- 1/2 cup apple cider vinegar
- 1/2 cup canola oil (or your choice of oil)
- 1/2 cup sugar
- 3 tbsp Tiger Sauce Original shake before using
Instructions
- Chop pepper and onion as described above and put into a large bowl.
- Drain black eye peas and shoepeg corn very well and put into the large bowl. (You'll need room to stir.)
- Drain well and chop the pimento as needed and put into the large bowl.
- Gently stir these ingredients until nicely mixed together.
- Stir the sauce made as described above and pour over the peas and vegetable mixture.
- Gently mix together to coat and incorporate well.
- Cover and refridgerate. Let marinate for 24 hours before serving.
- Serve with Tostito scoops or tortilla chips for dipping.
- Enjoy!
