Icebox Cookies: A Simple and Tasty Make Ahead Recipe
An Old Fashioned Recipe Still Perfect for Today
If you find yourself craving a homemade cookie but are short on time, then these make ahead Icebox Cookies are the solution. This is one of my grandmother’s recipes that is a long time family favorite. With key ingredients of butter, brown sugar, and pecans, these little cookies are perfect for keeping on hand. Once all the ingredients are mixed, then you form the dough into logs. Keep these logs in the fridge (or freezer for longer storage) and then slice and bake when you want a batch of fresh cookies!

Icebox Cookies
Ingredients
- 1 cup butter, softened to room temp
- 2 cups brown sugar, lightly packed
- 2 eggs
- 3 ½ cups all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 1 cup pecans, finely chopped
Instructions
- Sift together the flour, baking soda, and salt in a bowl. Set aside.
- In a large bowl, cream together room temperature butter and brown sugar.
- When butter and brown sugar is thoroughly combined, add eggs one at a time. Mix well after addition of each egg.
- Add dry ingredients to creamed mixture slowly. Add a third of the dry at a time and mix well after each addition.
- Add vanilla and blend in.
- Stir in chopped pecans.
- Dough will be crumbly but it will come together easily when you start to form the logs.
- Form dough into 4-6 logs (depending on how large or small you want the diameter of your cookie to be).
- Wrap each log in wax paper. Place in refrigerator overnight to chill.
- When ready to bake, slice a dough log approx. ¼" thick. Place slices on baking sheet lined with parchment paper.
- Bake at 350° for 8-10 minutes or until done.
- Cool and store baked cookies in an airtight container.
- NOTE: You can bake after chilling for one hour if you are in a hurry. Store dough logs in refrigerator for 2-3 weeks and in freezer for up to 3 months prior to baking.
These Make Ahead Cookies Are Great to Keep on Hand for Unexpected Guests
When you keep slice and bake cookie dough in the fridge or freezer, then you will look like a genius when you serve fresh cookies to unexpected company.
