Homemade Chicken and Rice Soup! No Canned Soup For You!
I will warn you now. When you make and eat this homemade chicken and rice soup you will never want to eat canned chicken and rice soup ever again! No canned soup for you! Yes. We love Seinfeld! 🙂
This recipe was given to me by my sweet friend, Kay, and her husband, Jim, who came up with this wonderful recipe. They gave me permission to share it with you. This soup is very quick and easy and so good when you are craving a soup that isn’t creamy or heavy. It is the perfect soup for someone who is dealing with sniffles or needing something easy on the stomach. Give it a try and let me know what you think in the comments below.
Jim's Homemade Chicken and Rice Soup
Ingredients
- 1 cup of carrots, chopped
- 1/2 of a small white onion, chopped
- 1 to 2 stalks of celery, chopped (optional)
- 1 to 2 tbsp cooking oil like canola (or butter)
- 48 oz Swanson Chicken Broth
- 1 can white meat chicken breast, shredded (or your own stewed chicken or rotisserie chicken, shredded)
- Dash of pepper
- 1 1/2 to 2 cups of Minute Rice
- Ingredients can be adjusted to your own tastes or amount of soup you need.
Directions
- Gather ingredients.
- Chop carrots, onions, and celery (if using).
- Drain, then shred canned chicken (or other chicken) in a bowl and set aside.
- Add cooking oil into your soup pot. Heat up to medium low.
- Put in carrots (and celery) and sauté for 10 minutes until they are beginning to soften.
- Add onions and sauté along with carrots/celery until they are translucent and veggies are soft. If your pot needs more liquid during the sauté time add a bit of chicken broth so that the veggies will not burn.
- Add in the box of broth and the shredded chicken.
- Add a shake or two of pepper according to your taste. No salt is needed unless you are using low or no sodium broth.
- Let this simmer on low for 40 minutes.
- Bring back to a boil. Add in 1 1/2 cups to 2 cups of Minute Rice and remove from stove. Let sit 5 minutes until the rice is done. I like more rice in my soup so I do add 2 cups of rice.
- This recipe makes 2 to 3 large bowls of soup or 4 regular sized bowls. Your soup is ready to serve with crackers or a sandwich. Enjoy!

- 1 12.5 oz can white meat canned chicken breast (stewed or rotisserie chicken may be substituted) shredded
- 1 dash pepper (no salt unless you are using low or no sodium chicken broth). Taste for preference.
- 1.5 to 2 cups Minute Rice
Instructions
- Gather ingredients.
- Chop carrots, onions (and celery if using).
- Drain, then shred chicken in a bowl and set aside. Or shred stewed or rotisserie chicken.
- Add cooking oil or butter to a soup pot. Sauté carrots and celery for about 10 minutes until they are beginning to soften.
- Add onions and sauté along with the carrots and celery until they are translucent and veggies are soft. If needed, during sauté time add a bit of chicken broth to the pot so that the veggies will not burn.
- Add all the broth and shredded chicken to the pot.
- Put in a dash of pepper according to your taste. You will not need added salt unless you are using low or no sodium broth. Check the taste to suit your preference.
- Let simmer on low for 40 minutes.
- Bring back to boil. Add 1 1/2 to 2 cups of Minute Rice, cover and let sit for 5 minutes, until rice is done. (I like more rice so I do add 2 cups.)
- You can definitely adjust the amounts of veggies, broth, chicken, and rice to suit your taste or amount of soup needed.
- Your soup is ready to serve with crackers or a sandwich!
