Chicken Salad With Grapes: Light, Easy, and Tasty!
This pretty chicken salad is so easy, quick to whip up, cool, and light. I love to make it during warm or hot weather. I usually serve it on lettuce with crackers as shown, but it is also good in a croissant. The sweetness of the grapes mixes perfectly with the fresh crunch of the celery and purple onions. It is a wonderfully light lunch to enjoy any day!
Ingredients
- diced cooked chicken
- mayonnaise
- red grapes, halved
- chopped celery
- chopped red onion
- salt and pepper
Optional ingredients:
- toasted pecan pieces or
- sliced almonds
Options and Tips
- Chicken – You can use your preference of chicken in this recipe. I have used canned, rotisserie, and boiled chicken. All were good. My favorite is to cook frozen chicken tenders in my Instant Pot using this recipe. They come out perfect with no thawing needed.
- Mayonnaise – I like mayonnaise in my chicken salad. Duke’s of course! You can use light or regular. You can also use plain Greek yogurt, or a mixture of yogurt and mayo, if you like it in your salad recipes.
- Use salt and pepper to taste. Be careful not to over salt the salad if your chicken is already salted.
- I like to sometimes mix in toasted pecan pieces but it is certainly optional.
- If I am not adding pecans, I like to put some sliced almonds on top of my chicken salad when serving it. It makes it so pretty and adds some crunch!
Chicken Salad With Grapes
Ingredients
- 2 cups chicken diced
- 1/3 cup mayonnaise (More or less to taste)
- 1/2 cup red grapes halved
- 1/2 cup celery finely chopped
- 2 tbsp red onion finely chopped
- salt and pepper to taste
- 1/2 cup pecans toasted & chopped (optional)
- 2 tbsp almonds for garnish sliced (optional)
Instructions
- Prepare all ingredients as instructed above.
- Put all ingredients into a medium bowl.
- Stir together until mixed well.
- Chill until ready to serve.
- Serve on lettuce and garnish with sliced almonds if not using pecans in the recipe.
