An Easy and Elegant Cheesecake Recipe
If you are intimidated by the thought of making a cheesecake from scratch, then try out this easy cheesecake recipe. It only takes minutes to come together. The hardest part is waiting for the finished cheesecake to chill for several hours in the fridge!

Here are a few helpful hints to ensure your cheesecake turns out great!
- Make sure your cream cheese is at room temperature – set it out at least 1-2 hours before you plan to use it.
- Set out the sour cream 30 minutes before you plan to use it to take the chill off of it.
- Use a store bought graham cracker crust – this recipe is all about ease.
- Let the cheesecake cool off before you place it in the fridge to chill it for several hours or overnight.

Sylvia's Cheesecake Made Easy
Ingredients
- 1 store bought graham cracker crust
- 8 oz. cream cheese, softened to room temperature
- 1 cup sour cream (½ cup for filling and ½ cup for topping)
- 2 eggs
- ½ cup sugar
- 1 tsp. vanilla extract
- 2 tbsp. sugar
- 1 tsp. vanilla extract
Instructions
- Preheat oven to 375°.
- For the filling: In a medium sized bowl, beat softened cream cheese with an electric mixer.
- Add in ½ cup of sour cream, 2 eggs, ½ cup sugar, and 1 tsp. of vanilla extract.
- Beat everything together well with an electric mixer.
- Stir by hand to ensure there are no lumps and pour into prepared graham cracker crust.
- Bake in 375° oven for 20 minutes. Remove from oven and cool for 10 minutes.
- Increase oven temperature to 475°.
- For the topping: Mix ½ cup sour cream, 2 T. sugar, and 1 tsp. of vanilla extract. Spread topping on and bake for 4 minutes at 475°.
- Let cool for 30 minutes before placing in refrigerator. Chill in refrigerator several hours before serving.
- Garnish with whipped cream and berries if desired.
