A Sensational Strawberry Cake Recipe That’s Sure to Please
This sensational strawberry cake recipe is one that has been passed around because anyone who eats it wants the recipe. I got this recipe from my dear friend, Kay, who got it from a sweet lady that everyone calls Nana. It has several steps for prep, but is not a difficult cake to make. It is so pretty in presentation, and tastes heavenly. This would be an excellent cake to have for Valentine’s Day, a summer cookout or picnic, or for any occasion where you want a lovely cake.
Important Prep and Baking Tips
- Be sure to thaw out and cook down the strawberries for the icing ahead of time. They need to be cooked to the consistancy of thick jam. If it is not thick enough it will make your icing thinner and more creamy.
- Don’t leave the strawberries as they cook down. They will stick and burn if they are not stirred often.
- Be sure the cooked strawberries are cooled well before making the icing.
- When mixing in the milk be sure to add it slowly while you are mixing the icing since you may not need as much if the strawberry mixture is a bit juicy.
- I like to blend the thawed strawberries that go in the cake mixture. I just pulse it a few times to get them chopped up well.
- Cool the cake well before icing.

Nana's Sensational Strawberry Cake

- 1 Hand or Stand Mixer
- 1 Mixing bowl
- 1 set Measuring spoons
- 1 Measuring cup
- 1 can baking spray
- 1 small pot
- Baking pan(s), One 9 X 13, two 9" round, or three 8" round Prepare with baking spray
Ingredients
Cake Ingredients
- 3/4 cup frozen strawberries thawed and chopped
- 4 eggs at room temperature
- 1 cup vegetable oil
- 1 box (3 oz) strawberry jello
- 1 box white cake mix
Icing Ingredients
- 3/4 cup frozen strawberries thawed and cooked down to jam consistency and allowed to cool completely. This can be done the day before and refrigerated.
- 8 oz cream cheese at room temperature
- 1 stick butter at room temperature
- 1 pound confectioner's sugar sifted
- 1 tbsp milk (less or more as needed) Be sure to add a little at a time
Instructions
Cake Instructions
- Preheat oven to 350 degrees. Prepare pan(s) using baking spray like Baker's Joy.
- Mix together eggs, oil, strawberries, and jello.
- Add cake mix. Mix well. Pour into prepared pan(s). Bake at 350 degrees.
- 9 X 13 for 25-28 min. Two 9 inch round pans for 28-31 min. Three 8 inch round pans for 28-30 min. Check toward the end of cooking time for doneness.
- Test for doneness by inserting a toothpick in the center. It should come out clean. Allow to cool completely.
Icing Instructions
- Mix together cream cheese, butter, and strawberries.
- Slowly add sifted confectioner's sugar.
- Add milk slowly to reach desired thickness. Add more milk slowly in tiny amounts as needed or add more confectioner's sugar to thicken the icing.
- Cool cake completely before icing it.
- Garnish with fresh strawberries as desired.
