Chocolate Oatmeal Drop Cookies: So Quick, Easy, and Yummy!
These are one of my favorite kinds of cookie! Some people call this recipe chocolate oatmeal candy. It is as good as candy for sure! Some people call them cow patties or cow pies but really, let’s not! Some people add peanut butter, chopped nuts, or even coconut but I like mine to simply have pure chocolatey sweetness!
Childhood Memories
This recipe holds some memories for me. It is one of the recipes that my mother helped me make as a young girl working on a cooking project for 4-H in fourth grade. I had to cook several recipes over a few weeks period to bring in for my project. This was one of them. Another was, of course, Rice Krispy Treats and another was this peanut butter cookie recipe. Now, when I make these chocolate oatmeal cookies, my sweeter than cookies grandson helps me by pouring the ingredients in the pot. I do all the stovetop cooking and work with the hot mixture. He helps me put the cooled cookies in the container to keep them fresh or we bag up some to give to other family members. This is, no doubt, after we share a cookie or two and a glass of milk!
Ingredients
The great thing about this recipe is that it is made from ingredients you probably have at home right now. It is simple to make and very quick. It is basically made from butter, cocoa, sugar and oatmeal so really, what’s not to love?
I love recipes that I can adjust to suit my own tastes so in the list below I have included some optional ingredients that you may choose to add for your own preference. As I said, I like mine best just plain chocolate oatmeal.
Ingredient list:
- Butter
- Cocoa
- Sugar
- Milk
- Quick One Minute Oatmeal
- Vanilla Flavoring
Optional ingredients: (Only add one optional ingredient per batch, not all to a single batch.)
- Peanut butter (Smooth or chunky will work)
- Chopped pecans
- Shredded Sweetened Coconut Flakes
Important Notes
- Be sure to watch and stir your first four ingredients constantly while it is boiling.
- On medium high heat, boil and stir for a full 2 minutes 15 seconds. It will not set properly if it is not boiled long enough. If it boils too long it will set up too quickly or be very dry.
- Remove the mixture from the stove and continue to stir allowing it to cool for just a few minutes until it is thick enough to drop on the parchment paper and not spread out too thinly. Work quickly using a spoon or a handy cookie scoop to drop the spoonfuls. It will set up in your saucepan if you leave it too long.
- Cool completely before transferring to a plate or container using a spatula.
No Bake Chocolate Oatmeal Drop Cookies
Ingredients
- 1 stick butter
- 4 tbsp cocoa
- 2 cups sugar
- 1/2 cup milk
- 2 cups quick one minute oatmeal
- 1 tsp vanilla flavoring
Optional Add Ins (Only add ONE of these per batch NOT all in one recipe!)
- 1 cup chopped nuts (I prefer pecans if I add anything) OR
- 1/2 cup peanut butter (smooth or crunchy is fine) OR
- 1 cup coconut (shredded, sweetened)
Instructions
- Lay out some parchment or wax paper on your counter in preparation to drop the cookies on it.
- Whisk together butter, cocoa, sugar, and milk in a medium saucepan at medium high heat. Keep whisking it until it comes to a full boil and then begin to time it so that it boils for a full two minutes and 15 seconds.
- Remove from heat and add two cups of quick one minute oatmeal into the mixture. Add one teaspoon of vanilla and stir all together with a spoon. At this point you will also add peanut butter or nuts or coconut (only one of these if adding) and stir together.
- Allow to cool for 2 to 3 minutes until you can pick up a spoonful or cookie scoop full to drop on the parchment paper. It will spread some but should make a little mound and not be too runny.
- The number of cookies you can make varies with the size of your spoonful. The ones pictured were larger ones so it made 18 cookies.

Growing up in PA, we called these oatmeal fudge cookies or no-bakes (and in our house, they always had peanut butter!) Whatever they are called, they are 100% delicious!!
They really are so delicious! I love the peanut butter ones too. When I was young we had them at school with our lunch some days! It was always such a treat!
