Cucumber, Tomato, Onion Salad: A Simple, Southern Recipe
This simple, southern cucumber, tomato, onion salad recipe is one I got from my mother. During the summer she served it at almost every meal. My dad always had a couple of huge gardens so there was no end to all the fresh vegetables that we had all through the summer. Because this dish brings back memories of countless meals with my family, this recipe takes me home to a simpler time.
Simple Cucumber, Tomato, Onion Salad
Ingredients:
- Cucumbers – amounts of veggies depend on the amount of salad you want to make. You can make as much or as little as you like. I used 6 small ones in this recipe.
- Tomatoes – I used one.
- Onions – I love Vidalia onions (from my state, Georgia) in this but any sweet onions will do. I used 1/2 of a large onion in this recipe.
- Water (warm)
- Vinegar (your choice) – I usually use white vinegar.
- Sugar
- Salt and pepper to taste
Personalize this cucumber, tomato, onion salad to your liking...
- Seed your tomatoes. (Click here to see a video tutorial about the way to seed a tomato.)
- Cut veggies into bite size pieces. Cut onion into strips or thin rings.
- Cucumbers can be peeled, partly peeled, or peel left on.
- Adjust the amounts of veggies to your tastes. Add more or less of any of the veggies. Or leave out.
- You can adjust the amount of marinade. Add more water, vinegar, or sugar depending on the sweetness you want. Taste it before pouring it over the vegetables.
- This recipe is best if it marinates in the fridge for a few hours but it’s still good if not.
- Serve this with any summer meal. It’s the perfect fresh side.

Ingredients
- 6 small cucumbers Use number needed for the amount of salad you are making.
- 1 tomato Use number needed for the amount of salad you are making.
- 1/2 sweet onion Use amount needed for the amount of salad you are making.
- 1 cup warm water Increase amount if needed. It needs to completely cover the vegetables.
- 1/2 cup vinegar I use white vinegar but you can use your favorite kind.
- 1/4 cup sugar (( usually add a little more because I like it sweeter.) Increase sugar and vinegar accordingly for larger amounts of salad and water used.
- Salt and pepper to taste You can omit this if you prefer. I like a little shake of salt and pepper.
Instructions
- Wash and dry vegetables.
- Peel cucumbers (if desired) and cut into circles.
- Peel and seed tomatoes and chop into bite size pieces.
- Peel and cut onion into rings or pieces to your size preference.
- Place in a bowl and toss together.
- Mix warm water and sugar together until the sugar dissolves. Add vinegar. Taste this and adjust accordingly. Microwave it for a few seconds if you need to dissolve the sugar more. Pour this over your cucumber, tomato, onion mixture.
- It's better if you let it marinate in the fridge for a few hours but not required.
- Sprinkle with salt and pepper if you choose. Enjoy your fresh and simple salad!
