Chicken Mushroom Noodles: So Easy and Healthy
This is a recipe that my dear friend, Zadie, and I came up with years ago to make for a healthy meal. I have tweaked it over the years. It is so good and really simple to make. Ingredients for Chicken Mushroom Noodles:
- chicken breast or tenderloins cut into bite sized pieces
- chopped onion
- minced garlic
- garlic powder
- Original Mrs. Dash
- salt to taste
- sliced white mushrooms
- medium egg noodles
- butter or butter spray
- olive oil

Hints and tips:
- When I make this meal I do not measure anything. I just go by the amount of chicken or noodles we need for my husband and me. I would add more chicken, ingredients, or noodles if it was for more than the two of us.
- You can adjust the amount of seasonings to your preference. You can add additional seasonings if you like other flavors. I like to keep mine simple.

Chicken Mushroom Noodles Dinner
This is an easy and tasty recipe. It's quick to get on the table, healthy, and so good!

Ingredients
- 2-3 boneless chicken breasts (or 8-10 chicken tenderloins) Cut into bite sized pieces
- 1/2 to 1 tbsp olive oil
- 8 oz package sliced white mushrooms
- 1/3 cup onions (or more to taste) chopped
- 1 tbsp minced garlic jarred is fine
- 1/4 tsp garlic powder (I sprinkle some on)
- 1/4 to 1/2 tsp salt (or to taste)
- 1 tsp Original Mrs. Dash (or to taste)
- 1/2 pkg medium egg noodles cook as directed on package
- butter or butter spray to taste
Instructions
- Wash chicken and then cut into bite sized pieces.
- Chop onion and mince garlic (or used jarred minced garlic)
- Start salted water boiling for the egg noodles and cook according to directions.
- Put a drizzle of olive oil in a large frying pan and turn on to medium heat.
- Add chopped onions and minced garlic and saute at medium heat until onions are softened. Be careful to keep stirring and watch constantly to keep from burning. Adjust heat as needed.
- Add chicken pieces, sprinkle with salt and garlic powder, and saute for about 5 minutes until no longer pink. Add a little more olive oil if needed to cook the chicken.
- Once the chicken is ready, add the mushrooms and stir together. Cover the pan but keep checking it and stirring until mushrooms are softened. When almost done uncover; stir and cook until most of the liquid in the pan is gone.
- Sprinkle generously with the Mrs. Dash over the top and then stir together. You can taste and add more Mrs. Dash or salt if desired. You may add pepper but Mrs. Dash contains pepper, so be careful if adding pepper to the dish.
- Drain the egg noodles. Spray with butter spray or stir in some butter.
- Serve plates with the noodles and chicken and mushroom mixture. You can mix it together, serve the chicken mixture on top of noodles, or side by side. I like to serve it with a green vegetable or with corn on the cob on the side.
