How to Make this Amazing Mexican Salad
Mexican Salad is a Fiesta on your Plate!
This Mexican Salad recipe comes together in a snap and is perfect for a tasty twist on taco night. A combination of meat, onions, chili powder, and a creamy cheese sauce with a kick can be made in 15 minutes. It is served over corn chips or tortilla chips and topped with lettuce. You can also add sour cream and salsa.
A Long Time Family Favorite
My mother has been making Mexican Salad for as long as I can remember. Everyone always loves it. This recipe came from one of her college roommates and has been a staple in our family ever since.
Easy Steps to Make Mexican Salad
Even if you are a novice chef, this recipe is a breeze to make. All it requires is browning the hamburger meat and onions together and melting together the cheese and can of tomatoes and green chiles (such as Ro-Tel). For all the details and measurements, check out the recipe below.
Mexican Salad
Ingredients
- 1 lb ground beef
- ½ medium onion, diced
- 10 oz processed cheese such as Velveeta, sliced
- 1 can diced tomatoes and green chiles such as Ro-Tel
- 1-2 tsp chili powder (more or less to your taste)
- ¼ cup water
- corn chips
- chopped lettuce
Instructions
- In a medium sauce pan over low heat, melt together the 10 oz. of cheese and 1 can of Ro-Tel.
- In a large skillet, brown the ground beef and onions over medium heat.
- When ground beef is browned, sprinkle over 1-2 tsp. of chili powder (more or less dependent upon how spicy you want it).
- Pour in 1/4 cup of water and stir to combine. Continue to cook over medium heat until water is gone.
- Pour melted cheese sauce over browned meat mixture and stir to combine.
- Serve over corn chips (or tortilla chips) and top with lettuce.
- Sour cream and salsa are also great toppings.
