Hazel’s Unique and Flavorful Potato Salad
I love potato salad. I don’t remember ever having one that I did not like, but this one is my favorite. It is creamy, unique, and delicious. The unique ingredient is apple. It adds freshness, and a little crunch and sweetness that take potato salad to a new level.
This salad recipe brings back special memories of my mother in law, Hazel. She knew how much I loved it because I told her every time she made it. When we would go to visit them for a meal she would make potato salad just for me…every time. She was never one to tell you she loved you with words but this spoke love to me so it is special.
Ingredients for Unique Potato Salad
- Potatoes
- Eggs
- Onion
- Green pepper
- Pickle relish
- A sweet apple
- Salt & pepper
- Mayonnaise (or Miracle Whip according to your taste preference)
Helpful Tips
- Be sure not to overcook your potatoes. Overcooked potatoes become mashed potatoes. Even a touch undercooked is okay. Drain once they are cooked and rinse well with cool water and place them in the fridge to cool. This stops the cooking process.
- Be sure to keep stored in the fridge. If you take it out for a picnic be sure to keep it on ice or get one of these handy bowls that will keep food cold or hot for 6 hours. It is handy even if you are not on a picnic.
- You can adjust amounts of the ingredients to taste. I usually don’t really measure anything when I make my potato salad and it always turns out good so it is very forgiving.
- Do not leave out the apple! It truly makes this recipe. The sweetness and crunch add the perfect flavor. Be sure to use a sweet apple like Red Delicious. I don’t think a tart flavor would be as good. ,

Hazel's Unique and Flavorful Potato Salad
Ingredients
- 6-8 large potatoes (depending on size) peeled and cubed
- 3 eggs boiled, peeled, and chopped
- 1/4 cup sweet onion (more or less to taste) chopped
- 1/2 green pepper chopped
- 2 tbsp pickle relish more or less to taste
- 1 sweet apple peeled, cored, chopped into cubes
- 1/2 tsp salt (or to taste) more or less to taste
- 1/4 tsp pepper (or to taste) more or less to taste
- 1 cup mayonnaise (or Miracle Whip if you prefer) more or less for preference
Instructions
- Boil peeled, cubed potatoes in well salted water for 10-12 minutes depending on the size of the cubes. Check them along. You don't want them overdone. A little underdone is better.
- At the same time, boil eggs for 8 minutes. Let them sit a few minutes, then cool them in ice water for a few minutes. Once cool, peel and chop.
- Remove potatoes from stove and drain. Rinse with cool water and put in the fridge immediately to cool down for about 15 minutes. They will turn brown if left too long.
- Chop the onion and green pepper. Peel, core and chop the apple.
- Place all ingredients in a bowl. Add the mayonnaise and stir together gently. Taste to see if more salt or pepper is needed.
- Cool in the fridge till ready to serve. Enjoy!
